These kale chips are a delicious alternative to potato chips–and with only 4 ingredients they are incredibly easy to prepare!
1 bunch kale, chopped 1 Tbsp. lemon juice 2 Tbsp. grapeseed oil 1/4 tsp. sea saltFind this recipe and many more in my cookbook, The Real Food Diet Cookbook!
Dr. Axe,
I notice you don’t use much olive oil in the recipes you post… why is that?
Thank you,
Hilary
Hilary- Olive oil oxidizes under heat, so I don’t cook with it much. Instead I use coconut oil.
I have not ever tasted kale chips but I am going to make them. Thank you for the recipe.
I buy kale in a large bag…so what would be the equivalent of 1 bunch of kale? 4 cups? HELP!
Hey Laura- Yes about 4 cups sounds right.
Hi Dr. Axe,
I tried the kale chips and was amazed a how
good they were. I didnt have any grapeseed
oil so I melted some coconut oil. Was still awsome.
I was SO excited to try these but made one big mistake: I washed them before seasoning, trying to dry them a little first, but A LITTLE was not enough. I’m thinking they need to be completely dry BEFORE adding the oil, lemon & salt. Unfortunately most of them were limp & soft after 12 mins in the oven. :( So I basically wasted the bunch, but will try again. They were organic but felt gritty, so I felt I needed to wash first, butjust wasn’t sure how to proceed from there – I guess I should’ve let them dry for a while before seasoning???
Just made these and they are great! They will feed the times when I need something crunchy.
I tried this out the the other day, so easy and delicious! Instead of putting them in the oven I popped them in the dehydrator overnight at 115 degrees to keep them raw & as jam-packed full of nutrition as possible. So yummy, thanks Dr. Axe!
I was very skeptical. I really don’t like the texture of cooked kale. But I tried it and they are great! I washed mine too but dried them the best I could. After 12 minutes most of them were dried but a few were not so I just turned the oven on to 200 degrees and left them for an extra hour. They just dissolve in your mouth. Thank you so much for all your healthy recipes.
Question: does the heat in baking destroy the vitamin K in the kale and the vitamin C in the lemon, as well as the other nutrients?
Finally made these. Very good but will take a couple of tries to get the seasons right. Anyways, my question is does any of the vits or minerals in the Kale get distroyed during the baking?
