One of Dr. Josh’s favorite breakfast dishes, this florentine omelete is packed with nutrients and is easy to make.

1 Tbsp. Coconut Oil
4 eggs (cage free organic)
1 handful spinach
1/4 medium onion, sliced
1/2 cup mushrooms
1 Tbsp. garlic, pressed
1/2 cup sundried tomatoes
1 pinch sea salt
3 Tbsp. feta cheese
