Egg Salad
4-5 Hard boiled eggs
2 tsp. chopped red onion
1-2 celery stalks, chopped
juice from 1/2 lemon
1/4 c. Vegenaise
sea salt & black pepper to taste

I love this recipe. I get my eggs from my neighbor whose chickens run around the yard and the yolks are orange and the eggs taste amazing. This is a recipe I use, but I add a few slices olives. Yum!
Any other suggestions for pre and post workout snacks would be so helpful. I will have this tonight for dinner after bootcamp. What should I eat before I go workout….a banana and peanut butter?

For a Pre-workout meal I usually eat a piece of fruit. For Post-workout I do: coconut milk, RAW Protein Powder, and Berries.
You want to get healthy fat, good protein, and some good carbs right after a workout.
If I am doing more intense exercise or a race I eat 2 hours before and do a banana and protein powder.
The recipe sounds tasty and is similar to what I use, except that I use an avocado in place of the veginnaise. It has the same texture as egg salad with mayo and is great in a lettuce wrap or on a bed of spinach like your recipe. With an avocado there’s no worrying about processing, additives, starches, flavorings or spices.
