Chicken Cacciatore2 lbs. skinless, boneless chicken breast

2 large tomatoes, chopped

1 large onion, thinly sliced

2 c. sliced mushrooms

¾ c. red wine

3 cloves garlic, minced

1 Tbsp. olive or grapeseed oil

Sea salt

Italian seasoning

On a medium setting, heat oil in a large skillet.

Add chicken, onion, garlic and red wine. Cook for 15 minutes.

Turn down heat to med-low. Add mushrooms, tomatoes, sea salt, and Italian seasoning.

Cook until chicken is white throughout and vegetables are tender.
